How fast and reliable are those paselas?

Not overly sure on rolling resistance but they're definitely not bricks by any means.
As for reliable, I've seldom ended up with a flat riding Paselas. Over the past 2-3 years of riding a couple sets of Paselas I've dealt with _maybe_ one flat a year.

Are those stock Raidoverks rack struts? Straight or offset?

They are not, they're a set of Salsa 8mm rack struts, straight. They're a perfect fit into the Raidoverks' mounting hardware. I do wish the Nature Boy had mid-fork mounts for the stock hardware though.
