How does that wheelset ride?

Really massive one. Perfect for city ride and workout on the road also. Chas (MASH SF) use a same rims on anniversary parallax. The bearings on Dura Ace hubs absolutely fantastic. I use this wheelset with latex inner tubes and Gatorskin tires (replace soon with 4Season).

Work perfectly... but i changed all gold parts, to silver. Dura-Ace's part add higher quality and performance.

Acceptable stem length is usually 90-110 for normal use and the racing setting is 120+

I'm currently using ZIPP Service Coure SL 90mm/6° stem, 40cm handlebar and 0mm seatpost. This setup perfect for my. The old setup with riser bar, has short 45mm stem. Also perfect for my, but only a riser bar. Thats all ;)

Absolutely! The distance between the chainstays and the crank is ~4-5 mm. I have 170mm crankset and 110mm Bottom Bracket (Original Dura Ace track FC7710 NJS)
The chain line is also straight.
